Who's Working With Us: Below is a list of the researchers and institutions who are currently collaborating with us on our projects: Onion and Brassica Project Home Page Dr. William Randle, Horticulture Dept., University of Georgia, Athens, GA Dr. Randle and his laboratory staff are helping us to assess the impact of sulfur fertility on the cysteine sulfoxide flavor compounds in kale to decrease flavor intensity, making kale more palatable. Dr. Carl Sams, Plant Sciences Dept., Universiy of Tennessee-Knoxville, TN Dr. Sams and his laboratory staff are helping us to assess the impact of sulfur fertility on the glucosinolate flavor compounds in kale, which also impact bitterness and flavor intensity. |
